GF Peanut Butter Chip Brownies

I almost forgot the most important part of the "thank you" dinner that Kim & Jen fixed for me a couple of weekends ago...DESSERT! :) I remember that I was so excited about dessert (and I may have been in the middle of a game of Rock Band 3...) that I didn't stop to take pictures before I gorged myself. And, by the time I got around to taking pictures, there was only one little, lonely brownie left. Try to imagine this brownie fresh from the oven, all gooey and warm, with melty peanut butter chips that stick to the inside of your mouth a little, oh - and with some vanilla bean ice cream and fresh sliced strawberries...and that's what our dessert was like! The best part was that they were gluten-free! :)

This doesn't really do it justice...they were amazing!

Brownies

I've had an insane craving for brownies lately, and although it's ridiculously easy to walk to Clements' and pay $3.99 for a little tray of 4 giant brownies, I really wanted to just make my own (not only because it's cheaper, but more importantly because I know exactly what ingredients are in it and from whence they came).

So, I surfed around the web and found this recipe. Now, the recipe says to grease & flour the pan, but give me a break - I'm making brownies, here! Everyone knows that cocoa powder is a million times better than flour if you're making something chocolate!! :) See???
So...this is what they looked like when I pulled the pan from the oven. I wish I could attach the smell to this blog post, because it was astounding!
And this is what they looked like the next morning...they didn't last long! :)

"Best Moist Chocolate Cake Recipe You've Ever Tasted"

For this Super Bowl party, I wanted to make a complete meal, from salad to dessert, so I planned to make a cake (my specialty, from what I'm told). I just made a carrot cake last weekend and still have a few pieces in the freezer, so this time I wanted to make a chocolate cake. My best chocolate cake so far has been this "Absurdly Easy Vegan Chocolate Cake," but for this occasion, I decided I wanted to make a "real" chocolate cake. Now, to understand how dedicated I was to this, you need to be aware of one thing - I am quite disturbed by the word "moist." I actually just had a mini panic attack when I typed it. So, you may now better understand how difficult it was for me to go to blackle (the energy-saving version of google that utilizes the exact same search engine) and type in "best moist chocolate cake recipe." Even though I had to take a Xanax to be able to read all the recipes, it was totally worth it! Here is the recipe I found, and It. Was. Amazing! Jen whipped up some vanilla frosting for that baby, and the three of us gorged ourselves on the "Best Moist Chocolate Cake Recipe You've Ever Tasted." Sweet!
